After raising her son as a single mother,
she found her career in banking and finance working at Exchange Bank, Summit State Bank, and SoFi, where
she excelled until a year ago.
Kim enjoyed animals as a member of local 4-H clubs. She showed horses, goats, and of course pigs. Her love for the pig would never die, carrying it thru to her adult life. She won numerous awards and trophies for her show animals.
She loved hiking and the outdoors, never taking for
granted the beauty of this area. She was a talented artist and loved life. Preceded in death by her father Vernon,
Kim is survived by her mother Dorothy, son Jake,
brothers Ken (Becky), Brian (Melanie Fivella), sister Renee
(Mauraan), granddaughters Kylie and Bianca, her one and only fur baby Chloe, and countless relatives and close friends. The meats come out tender & flavorful. If you don’t have a clay pot any casserole or cast iron pot will do.

Ingredients

• 2 pounds chicken thighs or legs, skin-on
• ¼ cup soy sauce
• 1 ½ cups water
• 2 TBS white vinegar
• 1 TBS fish sauce
• 1 tsp lemon juice
• 2 TBS peanut or vegetable oil
• ½ cup dark brown sugar
• 1 medium onion, diced
• 2 bird’s eye chilis or other small red peppers, minced
• 2 cloves garlic, minced
• 2 TBS fresh ginger, peeled and minced
• Cilantro springs for garnish (optional)

1. Blot the chicken with paper towels to remove excess moisture.

2. Combine the soy sauce, water, white vinegar, fish sauce, and lemon juice in a bowl and set aside.

3. Heat the oil in a wok or large skillet over medium-high heat. Working in batches, carefully place the chicken thighs in the wok skin-side down and sear for about 5 minutes, until the skin is golden brown. Transfer to a plate and set aside.

4. In a clay pot, Dutch oven, or deep skillet over medium heat, melt the brown sugar while stirring frequently to avoid scorching. When the sugar fully liquifies, immediately pour in the soy sauce mixture. Add the chicken, onions, chilis, garlic, and ginger. Bring the liquid to a boil, then reduce to a simmer and cook uncovered for 30 to 35 minutes, until the chicken is very tender and the sauce has reduced by at least half.

5. Use tongs to transfer the chicken to a serving dish. Pour the sauce over the chicken, garnish with cilantro springs, and serve hot with rice on the side.

Serves 4

February 26, 1949 – July 15, 2022

James (Jim) Miller went home to be with Jesus July 15, 2022. He passed at home in the early
morning hours with family by his side. He was born in Pasco, Washington February 26, 1949 to
James and Phyllis Miller. He attended high school in Thompson Falls, MT and graduated in
1968. He then enlisted in the Navy and spent 6 years serving his country before returning home
to California. In 1973 he met JoAnn Silva and in 1976 they married. They were married for 44
years before her passing in 2020. Cloverdale was his home for the last 33 years. He was rarely
seen without a cup of coffee in hand no matter the time of day. He was always out and about
talking and socializing – he’s never met a stranger! He could be spotted in his signature Stetson
hat and cowboy boots, Wrangler jeans and collared shirts. He spent most of his life working in
the lumber industry and truly loved being able to perfect his craft.

He was a man of great talent! He was a phenomenal knife maker, cartoonist, incredible story
teller, and cook. He’s known for his biscuit and gravy served at The Wheel Cafe and
Thanksgiving dinners. He was also an avid fly fisherman and loved taking his grandchildren to
share in the experience.

He is survived by his children Angelina Schneider (Andres Valdez), Mariah (Chris) Love, Capri
(Joe) Schriner, Lynae Miller, and James (Leah) Miller. His grandchildren Rebekah Ricetti,
Cameron Scully, Andrew and Joshua Valdez, Trevor, Nathan and Daniel Love, Cheyenne and
June Schriner, Connor Kalos, Tydon and Rocklyn Miller and one great granddaughter Scarlett
O’Dell. Jim is also survived by his siblings David, Kevin, Jon, Kelly, Kenne, Tom, Zach, Jeffri and
Tim. He was preceded in death by his wife, JoAnn Miller, parents James and Phyllis Miller and
sister Jean Robbins.

In lieu of services, donations can be made to themajestieslove.org in his name.
