Love is in the air this month. I’ve made this dish for my wife every Valentine’s Day for the last 30 years.

Salmon With Hollandaise Sauce

2 each – 6 to 8 ounce Salmon filets, skinless & pin bones removed

You can substitute chicken or any white flesh fish. I serve this with white rice or a nutty rice pilaf. For the Salmon lightly salt & pepper both sides. In a non-reactive pan, on medium high heat, place two tablespoons of olive oil & cook each side for two minutes. Finish in the oven for another ten minutes at 350 degrees

Hollandaise Sauce

• 10 tablespoons unsalted butter (if using salted butter, skip the added salt)
• 3 large egg yolks
• 1 tablespoon lemon juice
• 1/2 teaspoon salt, divided
• 1/8 teaspoon cayenne, optional

Melt the butter slowly in a small pot. Try not to let it boil—you want the moisture in the butter to remain there and not steam away. Add the egg yolks, lemon juice, 1/4 teaspoon of the salt, and cayenne (if using) into your blender. Blend the egg yolk mixture for 30 seconds at a medium high speed, until it lightens in color.

Turn the blender speed to low (if you only have one speed on your blender, it will still work). With the blender running, slowly drizzle in the melted butter, continue to blend.

Turn off the blender and taste the sauce. It should be buttery, lemony and just lightly salty. If it is not salty or lemony enough, you can add a little more lemon juice or the remaining salt to taste. If you want a thinner consistency, add a little warm water. Pulse briefly to incorporate the ingredients one more time. Drizzle the sauce over the salmon and it’s a wonderful meal for two.

Fire and Earthquake Safety Expo 2022

Bring the entire family for a fun, free day of emergency preparedness activities and safety training. The second annual Fire and Earthquake Safety Expo will be held at the Cloverdale Citrus Fairgrounds on Sunday, May 1st from 10 am to 4 pm. You will have the opportunity to receive hands-on orientation training, watch emergency response and safety product demonstrations, talk to first responders, browse safety information exhibits, listen to speakers and more. Henry 1 helicopter will again make an appearance and demonstrate an injured person rescue.

Included are a free breakfast from Cloverdale Kiwanis and a free lunch from River Rock Casino, while supplies last. This is a unique event to help Sonoma County be better prepared for the next wildfire and earthquake. Public education and training will be provided in both English and Spanish. Law Enforcement Services
Recently there have been some discussions posted on the Community of Cloverdale Facebook page involving interest in contracting law enforcement services with the Sonoma County Sheriff’s Office. Much of these discussions
involve inaccurate and misleading information about how the sheriff’s office can provide more police presence and that the services would essentially be provided at no cost to the city. These inaccurate and misleading statements have generated some interest among community members. However, these statements are simply not true nor are they supported by facts. The cost to contract law enforcement services is an expensive endeavor as evidenced by the two contract cities within Sonoma County.

The City of Sonoma has contracted with the Sonoma County Sheriff’s Office since 2004. The department nearly mirrors the size of Cloverdale and is staffed by 16 employees, which consists of a Police Chief, 2 Sergeants, 10 Deputy Sheriffs, 2 Community Service Officers, and 1 Administrative Clerk. Dispatch services, investigations, records management, and property/evidence are handled by experts at the Sheriff’s Main Office and are included in the contract. The cost for law enforcement services in the fiscal year 2021-2022 is projected at $4,988,226.00 with additional expenses estimated at approximately $771,044.

The Town of Windsor has contracted with the Sonoma County Sheriff’s Office since 2008. Although larger, the Town of Windsor is staffed by 24 employees, which consists of a Police Chief, 3 Sergeants, 17 Deputy Sheriffs, and 3 Office Staff. Services include patrol, investigation, traffic enforcement, K-9, school resource officer, juvenile diversion counseling, and management of the animal control services. The indirect cost associated with dispatch, records management, and administrative services is also reflected in their budget. The cost for law enforcement services in the fiscal year 2021-2022 is projected at $8,728,160.

The City of Cloverdale is staffed by 21 employees, which consists of a Police Chief, a Police Lieutenant, 2 Sergeants, 9 Patrol Officers, 6 Dispatchers, 1 Records Manager, and 1 Community Services Officer. Services include patrol, investigation, traffic enforcement, parking enforcement, and management of the animal control services. The cost for law enforcement services in the fiscal year 2021-2022 is projected at $4,753,301. The Cloverdale Police Department also provides numerous ancillary duties not mentioned above and our response time, on average for emergency calls, is approximately 6 minutes.

Based on the information provided, there is clear evidence to support the fact that contracting law enforcement services with the Sonoma County Sheriff’s Office would potentially cost more than what it costs for the city to
provide its services.

Additional factors to be considered when contracting with the County:

The first thing that would happen is the Chief of Police and the Lieutenant would not be included in a proposed contract. At best, the Lieutenant may remain, and that position would most likely be reduced to a Sergeant. The current Police Dispatching functions would more than likely be absorbed by the County and, the Records Division would more than likely be transferred to the main records section of the Sheriff’s Office in Santa Rosa.

A highlight of 2021, though, was the birth of Harper Jade Ottoboni. We were very excited, as you would be, that your bestie, Shelby and her wonderful hubby, named their beautiful baby girl in your honor. Knowing how much you love children, we know that this little girl would be the apple of your eye. We will give her extra xoxo’s for you.

This year, on Monday, Feb. 7th, a day after your birthday, Sonoma County Parks will be assisting us in installing a Bat House at the Cloverdale River Park.

Returning to the US with a Covid negative test
The U.S. Centers for Disease Control and Prevention has expanded the testing program for international travel to the United States, allowing airlines to accept at-home instant tests that include remote supervision.

One company gained instant popularity for travelers looking for a more straightforward to get COVID-19 tests to fly back to the United States. I recently used this test while in Belize and it was easy to administer, took only 15 minutes and was accepted by the airlines, no questions asked.

5 Common Mistakes Travelers Make Returning to the U.S.
1. Not Having the Right Type of COVID-19 Test
The only negative tests acceptable are either an antigen test or a nucleic acid amplification test (NAAT).

If you are packing a self-test to take while traveling, the test must be a SARS-CoV-2 viral test (nucleic acid amplification test [NAAT] or antigen test) with Emergency Use Authorization (EUA) from the U.S. Food and Drug Administration (FDA).

The testing procedure must include real-time supervision remotely through an audio and video connection and must confirm your identity, observe the sample collection and testing. Results can be shown either on paper or electronically.

2. Forgetting to Declare Food.

Packaged cookies or candy is ok but food such as an apple served on the plane needs to be declared.

3. Not Having Proof of Vaccination

Acceptable proof of vaccination at the U.S. border includes: Vaccination certificates or digital passes with QR codes. A printed vaccination record or CDC vaccination card or a digital photo or electronic copy of your vaccination record/COVID card

4. Not Having Global Entry Membership

Now that international travelers are finally allowed back into the U.S., the country is experiencing a surge of visitors, causing longer entry lines at land borders and international airports. Spend the $100 fee for a five-year Global Entry membership, which will allow you to speed through reentry to the U.S. Use it once and you’ll agree that it’s completely worth the cost.

5. Arriving to the Airport Too Late

Arrive at the airport three or more hours before your flight home because airlines now have a number of things to check before they let travelers board a flight to the U.S., including vaccine cards and COVID tests, which can add hours to check-in lines. Be sure to leave extra time in case of long lines.
