Sponsored by Ray’s Food Place, Furber Plaza

For me Christmas is about family & friends coming together to celebrate the holiday. A frittata is an excellent brunch dish, or you can add meats for a hearty dinner meal. The eggs are a blank slate so you can be very creative with ingredients. I like to cook mine in cast iron, but any good baking dish will do.

Ingredients

• 6 large eggs
• 1/3 cup heavy whipping cream
• 1/2 tsp salt, adjust to taste
• 1 cup grated mozzarella cheese
• 1/2 cup goat cheese
• 1/2 cup cherry tomatoes
• 1/2 cup bell pepper, red, orange or yellow
• 1 cup arugula
• 1 tbsp unsalted butter
• 1 tsp fresh herbs, for garnish

Instructions

Preheat the oven to 400F. Whisk eggs, heavy cream and salt until you get a smooth and even texture. Set aside.

Cut tomatoes in half. Chop bell peppers into small pieces.

Melt butter and coat the sides of the baking dish with it. Spread vegetables and greens evenly on the
bottom of the pan.

Pour over the egg mixture. Sprinkle the cheese on top. Using a fork, distribute the cheese around a little to
incorporate it into the eggs. Bake for 15 to 17 minutes, or until the edges and center are set and the top is golden. The internal temperature of the Frittata should reach 160˚F on a thermometer.

Bob lived a full and passionate life in his 78 years, filled with family, friends, adventures, travel, and music whether it was jazz, blues or opera. He was known for his intelligence, compassion, wit, generosity, and kindness. He found much gratification
with his life choices and community involvement. His work career included work in the Peace Corps in Colombia 1968-70, and 30 years work at California Human Development, helping thousands of immigrants and farmworkers gain technical and vocational skills to better their lives.

Bob leaves a loving family, his wife of 39 years Jennifer and son Andrew (Carsen), brother Dick (Jacque), niece Elena (Liam), and our Connecticut family, sister-in-law Terry and her 3 children and spouses and 8 grandchildren.

The family thanks the angels at Anchor Hospice for their compassionate care for Bob and family in the last 5 months of his life.
A Celebration of Life will be held at a later date, when our grief has subsided.

He told me all about Santa and “kissmuss”. He also got his holidays mixed up a bit as he said he would either be a policeman for “kissmuss” or a dinosaur. Whatever he decides, I can’t wait for my annual Christmas morning Facetime call.

Here in Cloverdale, our holiday calendars are jam packed. Take a look at page 7 and check out all the things that are
happening. Don’t miss the Winter Festival, the first Community Choir performance, photos with Santa, Holiday light contests, the Lions Toy Run, Kiwanis Crab Feed, The Christmas Table and more.

What holiday traditions do you enjoy? When I was little, on New Years Eve at midnight, my mom would hand my brother and I pots and pans and have us run from the back of the house to the front of the house, making as much noise as we could,
chasing the bad out and making room for all the good that would happen in the new year. I think I’ll bring that tradition back this year and maybe even dress up as a dinosaur – we need all the positive thoughts as possible.

I’ll see you around town!
